hello to those who read…
i was going to call this post “whatcha eating wednesday” but darn it it’s tuesday….hmmm
words are few today… i am sure that everyone is that way…but today is my day…nonetheless pics to share and a few recipes too….
i cook lots and rarely share here because i guess i figure you could google and find what you would like to cook but these are two that i would give 5 stars to be sure…
we rate things in our house- “would you like to eat this recipe a.} once a year, b.} once a month, or c.} once a week??” we only keep the once a week ratings and they are filed in the “go to” book!! so here are the new members of that club!!

p.p.s. if we have to take a dish somewhere it typically is not low-fat…
p.p.p.s. if we eat it at home it is typically something good for you….thus the following…
pizza bites: (i made two pans for small group and they were gone in less than 15min. – i.e. note to self, make them again!
1 roll thin crust (can)
jar pizza sauce
whatever pizza toppings you like including cheese
grated Parmesan (fresh please)
*we did mini-peperonis and cheese (kid friendly & easy to eat)
2T melted butter seasoned lightly with italian seasoning or garlic powder (whatever) and then sprinkle with grated Parmesan cheese!!
unroll dough and cut into 1.5″ squares (best you can), place a small pile of toppings in the middle of each, pinch edges together and place seam side down in a cake pan (these are not cute but round i am guessing is best)…brush with butter & seasoning mix and cook until golden brown (@12-15 min.)
**i put the ramekin in the middle for traveling purposes and the pans were kindof big for one recipe…worked great and easy to transport, they even stacked (the second recipe)
**mia did almost all of the preparation (her favorite thing …cooking/helping) , except for cutting the squares and putting in the pan she did all of it!!

salmon cakes:
ok…people… salmon is not scary and is certainly one of the best things you can eat when it comes to all of those wonderful fats with the omega in front….we love salmon and my kids think it is chicken…i am convinced that if we expose our kids to super healthy things as a part of everyday life- the chances that they will choose a healthy lifestyle that includes “chicken” are much higher…typically we offer things repeatedly and they have accepted almost all things…
here goes: try it!!
decent size piece of salmon (maybe @ 10″ long?) recipe says 6 oz.
1 1/2 cup cracker meal (i pulvarized ritz- one sleeve…something else would be healthier but that is all i had)
2 large eggs beaten
2 rounded teaspoons old bay seasoning
1/2 red pepper diced
3 teaspoons dill
1 teaspoon cayenne/hot sauce (i used a tangy sauce not really hot)
1 lemon zested and squeezed (include lots of zest and all of juice)
olive oil (recipee called for vegetable)- just barely enough to “fry” the cakes
cook and flake salmon with a fork, beat eggs and mix all other ingredients together….patty and cook until golden brown!
sauce:
1 cup mayo
1/2 cup cayenne/hot sauce
1/4 picked relish
*mix and chill
enjoy!!
oh speaking of enjoying…

i wear my bracelets every day and they mean something to me…this new one just is a little more descriptive…

“My flesh and my heart may fail, but God is the strength of my heart and my portion forever.”
this verse brings tears to my eyes….always….i will always have trouble telling people what verse it is….it is hard for me to wrap my mind around the fact that God in all of his glory thought to give me a portion of himself …. regardless of my wretchedness…i am incredibly weak and have chosen things in my flesh…but he seeks after me…daily….
i am sustained because he is my portion…..
Oh God let my desires be for you…..alone.
